Potatoes are my favourite vegetable and I like to cook it when I want to avoid eating bread, rice or pasta. This recipe is really simple and works every time, it worked even with my husband (he didn’t like potatoes very much but he really likes this roasted potatoes recipe), I use it as a side dish or even for my Sunday roast lunch.
Recipe for 2 “hungry” persons who still want to eat healthy and delicious food 🙂
You will need:
3 large potatoes
2 tablespoons of olive oil
2 cloves of garlic
Black pepper
Paprika
Rosemary
Oregano
1 tablespoon of vinegar
Salt
For the preparation:
Take a medium-sized boiling pan and put about 2 glasses of water and bring to boil. Cut the potatoes into medium-sized pieces and put them into the boiling water to boil for about 6-7 minutes. After that drain the potatoes and put them into a tray (where I usually put a baking paper to avoid oiling the tray) and then place the potatoes gently. Preheat the oven at 200C/400F/gas mark 6.
Now comes the fun part, slice the garlic in half and distribute on the tray, spice the potatoes as you like and at the end add the vinegar,oil. After that mix all the ingredients together (I use my “washed” hand to do this) and put the tray in the oven at 200C/400F/gas mark 6 on a grill modality “the heat coming from the upper side of the oven”. Let the potatoes cook for about 30 minutes checking they are completely cook. Once they are cooked you will have soft-hearted on the inside and crunchy crusted potatoes on the outside.

Very nice recipe. I make a similar recipe and sometimes I will add some fresh grated Parmesan cheese on top….a healthy cheese of course :).

If you are into cutting carbs, turnips make a great potato substitute. This awesome recipe could easily be tweaked to work with turnips~!

Bad!:( when I added the vinegar the kitchen exploded! hehe just kidding. It’s really delicious, first time I add paprika to this recipe and it’s a different taste. The potatoes are from Perú, we’ve thousand of species of potatoes, if you came some day with this recipe I suggest you the “yolk” variety. Regards.
