Salmon fillet roasted in foil with mashed potatoes and carrots

Salmon fillet roasted

Yesterday my “hubby” was  feeling  a bit poorly so I had  to take care of him ( you know how men are about having just 2 lines of fever more than normal). I didn’t have much time to cook properly because after work I was feeling exhausted so had to prepare something really fast but nutritious and delicious for dinner. After a quick inspection to the fridge I ended up cooking this nice recipe which I really enjoyed because it reproduced the exact flavour that I wanted.

To make this quick and easy recipe for 2 persons you will need:

2 salmon fillets (the size it’s up to you)

1 clove of garlic

2 cherry tomatoes

1/3  glass of white dry wine

Oregano

Dill

1 slice of lemon

Black pepper

Chives

Salt

For the mashed potatoes and carrots:

1 large-sized potato

1 large-sized carrot

1/2 glass of milk

20g of cheddar

Salt

This recipe is perfect for the tired or lazy days, so don’t worry you won’t be doing a lot 🙂

Firstly, take a boiling pot and put the potato and  the carrot  in cold water (remember if you want mushy potatoes or any vegetable you need to put the vegetables when the water is cold and if you want them to save the primary shape for example roast potatoes you should put them in boiling water) and let them cook for about 25 minutes.

Meanwhile, take a kitchen foil (it should be double the length of the salmon fillet) and place the salmon fillet, the sliced cherry tomatoes,the sliced lemon, oregano, black pepper, the wine, the salt, chives, dill and after carefully seal the edges of the foil. Put the fish on the pre-heated oven on 190 C/380F/ gas mark 5 and cook it for 20 minutes and after  20 minutes open just the upper edges of the foil and cook for 5 minutes and you are done with the fish.

The potato and the carrot will be cooked after 25 minutes, all you have to do is mush them together with 1/2 glass of milk, 20g of cheddar and salt. There you go, even though you were tired you should be proud  of yourself because you have cooked something delicious and avoided to have those “horrible” pre-cooked meals.
