Keep calm and Curry on

 Chicken Curry Recipe

There are so many perfect combination in which we can cook chicken, you can roast it with potatoes/ make a perfect broth for a soup/ make yummy chicken rolls”gordon bleu” and add cheese and ham/ or simply cook it on a frying pan with peppers, wild fennel seeds “I will post the recipe soon”. Anyway one of my favourite ways to cook chicken is “chicken with curry” because cooking chicken with peppers, Curcuma, turmeric, curry,coriander seeds, onion, garlic and yogurt works so well and surprisingly enhances rather the hide the wonderful flavour of the chicken.

 

To make my version of Chicken Curry you will need:

For 2 persons

350 gr of chicken breast

1 medium size onion

3 cloves of garlic

Some slices of ginger

½ of bell pepper

5 medium sized fresh tomatoes

Turmeric

Curry

Coriander Seeds

Black pepper

Salt

1 tablespoon of Yogurt

Paprika

Hot Chilli powder

1 small fresh chilli

1 cup of Basmati rice

1 tablespoon of Olive oil

 

Now get ready to cook something really yummy 🙂

 

On a frying pan add the oil, the chopped garlic, onion, pepper, ginger (please make sure all these ingredients have the same size so that they cook evenly) and cook together for about 5 minutes on a medium heat and then add the chopped chicken breast.

Cook everything together until the chicken is slightly brown on very side, then add the chopped fresh tomatoes, stir, cover and let it cook for about five minutes, then take the lead off and add the black pepper, salt, paprika, chili, turmeric, curry, coriander seeds, hot chili powder mix them all together and add warm water (until it covers the chicken) stir, put the lead on and cook it for 30 minutes on a low temperature, making sure you check every now and then to avoid something get burnt.. 🙂

Once the sauce is not liquid anymore add spices as you prefer, stir all together and add the yogurt, stir, turn the heat off and cover.

Now here is how I cook the rice, (it works every time)

Take a sauce pan add the cup of rice and to that add nearly 2 cups of water. Cover with the lid and let the rice bring to a boil on maximum heat, when you see the rice is boiling immediately turn the heat to its minimum and let cook (with the lead on) for about 15 minutes checking if the water is completely absorbed.When you see the water is completely absorbed turn the heat off and let it rest for about 2 minutes.

Everyone has its own personal way of cooking the rice, it is important to practice because once you get used to it, your way of cooking the rice will be perfect!

Now all you have to do is assemble the rice with the curry, sit down and experience the moment! Enjoy!!!

    1. Hello “servicefromheart” I am really happy you visited my blog. To make the chicken and curry dish I think it takes about 1 hour. You will need to cook the chicken with the vegetables and spices and cook the rice. I hope the recipe will help you, if you ever decide to make it!
