This lentils soup is a perfect solution every time I want to eat something healthy, delicious and want to detox after “fully immersion into food” during holidays like Easter. The soup has very few ingredients and it is very easy to make. You can have it when outside is cold or even as a perfect vegetarian dish. You can add croutons,pasta or even rice in it.

 

To make this delicious soup all you need is:

150 gr of cooked lentils (organic possibly)

1 carrot

1 small onion

1 stalk of celery

1/4 can of plum peeled tomatoes

2 teaspoons of olive oil

Salt

Black Pepper

Paprika

Fresh Parsley

100 gr of  chopped Spaghetti pasta (but you can use different types of pasta)

 

Take a wooden spoon and get ready to cook:

First chop the onion, the carrot and the stalk of celery and cook them with the oil on a sauce pan, for about 5 minutes on a medium heat. Then add the lentils, 1/2 liter of water, tomatoes and let everything cook together for about 20 minutes (please note that if you want, you can use the fresh lentils but you will need to put them in a container under cold water for about 12 hours before cooking “I am too lazy to do that” :)). Anyway after 20 minutes add the pasta and  let everything cook for another 10/15 minutes together, meanwhile add the parsley, the salt, the black pepper and paprika, that’s it.

    I don’t see any broth mentioned. I was about to make this tonight but that made me stop. Of course, I could use vegetarian stock but I’m just wondering what you use.

    1. Emilio in this soup there is no need for a broth. I think you don’t have to add other stocks for a soup which produces already its own broth. All you have to do is cook the vegetables,add water and that is all. Please follow all the recipe and let me know what you think. I am sure you will like it.

        I ended up cooking the lentils in vegetarian stock, but when I added everything together, there was no liquid. I ended up adding about 2-3 cups of broth and it was very good. I’m not used to cooking without amounts of ingredients specified but this was very easy and tasty!
