Baked Pasta – Pasta al forno
One of those dishes we cook when we have friends coming by or big family gathering. There is not a lot of things to say about this recipe apart from: yummy meatballs, gooey cheese, Chorizo, baked pasta and other people congratulating your “hard” work.
To make this special recipe you will need:
For 2 persons:
250 gr of pasta (we used Tortiglioni or Rigatoni but you can use whatever pasta you like)
50 gr of Chorizo salami
3 Mozzarella cheese
50 gr of Cheddar cheese
For the meatballs you will need:
500 gr of minced meat Fresh
Parsley
2 cloves of garlic
1 egg
3 slices of bread
Salt
Oregano
Olive Oil
Black pepper
For the tomato sauce you will need:
1 can of peeled plum tomatoes
1 small Onion
1 clove of Garlic
Salt
A sprinkle of Sugar
2 tablespoon of Olive oil
Put on your favourite music and get ready to “create”:
First thing, to do is wet the 3 slices of bread with water until soak wet and then squeeze the water off the bread with your hands (I know it doesn’t sound appealing but this is the old-fashioned way of doing it, your meatballs will thank you later) 🙂 After that, you take a bowl and put the meat, bread, grated garlic,fresh parsley,the egg, the bread, salt,black pepper and carefully mix all the
ingredients together until you have a nice uniform and “yummy” smell mixture. Put the bowl to rest for about 2 hours in the fridge, covering with a cling film. After 2 hours take the mixture out of the fridge and make very small thumb size meatballs and after, fry them ( we don’t like fried food very much so we roasted them in the oven at 180 C/ gas mark 4/350 F) If you decide to fry them, after fried cover the meatballs with the kitchen paper to wipe the excessive oil away.
Meanwhile boil the pasta in the boiling water (making sure to cook them Al Dente as they will continue cooking in the oven), So if you need to cook the pasta for about 12 minutes drain it after the 9th minute. After that, drain the pasta and put it on the baking tray (we used a circular pyrex). Meanwhile cut the Mozzarella,the Cheddar and the Chorizo into pieces, (this stage is very dangerous as I always end up eating like 40% of the ingredients).
To make a nice tomato sauce, all you have to do is: add some olive oil, the chopped garlic and onion on a frying pan on a medium heat and cook together until transparent. Then add the tomato can, don’t forget to add some sugar to take off the acidity flavour of the tomatoes, finally add the salt cook all together for about 15 minutes and that’s it.
So far you should have the cooked pasta, the tomato sauce, the meatballs, the chopped cheese and chorizo ready. If yes, mix everything together leaving apart the half of the mozzarella which you will put on the top of the tray. Place everything carefully on the tray, sprinkle with tiny pieces of mozzarella cheese and if you want to add the Italian touch grid some Parmesan cheese.
Cook everything for about 30 minutes at 200 C/ gas mark 6/400 F until the cheese has melted and you finally have your Baked pasta.
After 30 minutes you will have a masterpiece in front of you! 🙂
