Spaghetti Carbonara
I think that whenever a recipe is easy and has few ingredients than it is the best. Spaghetti carbonara reminds me of the simple and fabulous homemade recipes that our grandmas used to make for us. They didn’t use fancy “sauces” or expensive cooking utensils, all they had was easy and accessible ingredients, yet they could make the most wonderful and tasty dish in the world.
To me “Spaghetti Carbonara” is one of those dishes, in fact all you need just a few simple ingredients like bacon “pancetta”, eggs, milk and cheese and parsley. The combination of these ingredients with pasta is so perfect that you don’t need anything else added.
To make this type of pasta you will need:
For 2 persons
250 gr of Spaghetti Pasta
250 gr of Italian pancetta
1/3 glass of milk
2 eggs
50 gr of Parmesan Cheese
Black Pepper
Salt
Parsley (to garnish/optional)
Preparation ( all the process will last 20 minutes)
First you need to stir fry the pancetta with some black pepper on a medium heat for 10 minutes and turn the heat off. Aside, on a bowl put the eggs, Parmesan cheese, the milk, a bit of parsley, salt and black pepper and mix all together.
Mean while cook the pasta on a boiling salty water, then drain it al dente and place on the pan when you had previously cooked the pancetta.
In the pan ( with the heat off ) where you have the pasta and the pancetta put the mixture of eggs, Parmesan cheese, black pepper and milk, then turn the heat to its lowest heat and carry on stirring all together until you notice the eggs becomes creamy.
As soon as you notice the eggs is creamy you turn immediately the heat off and garnish with a bit of parsley if you want. And that’s it folks! 🙂
