Meringues with homemade fresh fruit jam/sauce
2 days ago I really wanted to eat something sweet for dessert but I didn’t want the usual slice of cake, I wanted something different, that required few ingredients and produced a different texture and I came out with this idea of making small meringues (crunchy outside and soft inside) and on the top I decided to put my own jam/ fruit sauce that I usually put on the cupcakes as well. My husband and I loved it and I wanted to share the recipe with you.
To make this recipe you will need:
3 eggs white
A pinch of salt ( helps the egg white stand up in high peaks)
1 cup of sugar or 115 gr of granulated sugar
For the fresh fruit homemade jam/sauce you will need:
1 cup of fresh strawberries
1 cup of fresh blueberries
1 1/2-2 tablespoons of sugar (it depends how sweet you want the jam to be)
1 half lemon
1/2 glass of water
To make the meringues:
Preheat the oven to the lowest heat possible 90C/110 F/gas mark 1/4. In a bowl (please make sure it is grease free and not plastic as it avoids your meringues going fluffy), put the egg whites on a bowl add a pinch of salt and start beating them with an electric or normal whisk (make sure there is no water left in the whisk because otherwise the whites won’t go fluffy) until they are light in texture and stand up in peaks.
Now it is the moment to add the sugar carefully and slowly while beating the eggs until you have a shiny and glossy mixture. Please make sure not to over-mix the mixture otherwise it will dissemble later. When you see the mixture is ready and is “yummy” use a dessertspoonful or a piping bag to put the mixture on a baking tray (with a baking paper so that the meringue doesn’t stick) and flatten it to make an oval shape or whatever shape you like them to be.
Put the meringues in the oven. Basically all we what is just for them to dry (not cook them) let them in the oven for about 1 hour and 30- 45 minutes it really depends upon the oven. Please check them only after 45 minutes they are in the oven. When you see they are crunchy in the outside and you can easily take them out of the tray then they are ready. When they are ready leave them to cool in the oven for about 2 hours but leave the oven (with heat off and open).
Making you own homemade fresh fruit jam/sauce
To make the jam/sauce it is very easy, all you have to do is put on a sauce pan the fresh strawberries or blueberries (whatever fruit you like) add the sugar, lemon juice and turn the heat on medium/low and heat until the sugar is transparent then add 1/2 glass of water and let them cook making sure to mix once in a while until you have the right consistency. I did this operation for the strawberries and blueberries and ended up having two yummy fresh homemade jam/sauces. Really proud of myself! 🙂
All you have to do now is enjoy the meringues with or without jam, or you can even make meringue sandwiches with jam or cream in between!

Shed not a fan of regular batter cakes, but loves strawberry shortcake, I guess is why she and her partner chose this recipe. If a 9-year old can do it, anyone can!
