Grilled vegetables with dressing (Vegetarian recipes)
I know many people who are non so keen on vegetables, they would never eat them unless blended on a soup. Vegetables, to my opinion are the most versatile ingredients we have in the kitchen and thus there are so many ways to cook them but I think sometimes the best way to do this is the simplest way. So that the people who doesn’t like them can discover the true flavours of the ingredients and you would even enhance the its special taste just having grilled vegetables with a nice dressing. Food is one of those things that we need not only to feed ourselves but also it is an experience of particular flavourings, we discover and share cultural patrimony and sometimes it help us think “outside the box”.
All you need to have is:
2 bell peppers
For the special dressing:
2 tablespoon of good Olive Oil
A pinch of Salt
1 tea-spoon of Balsamic Vinegar
1 clove of garlic (optional)
All you have to do is, take your grill pan (or if you don’t have it you can use a good non stick frying pan), turn the heat on maximum (no oil on the pan otherwise they would fry 🙂 ) Mean while cut the vegetables about 0,2 inches in thickness and carefully place the vegetables on the grill (or pan) and let them cook for about 2 minutes on each side. Place them on a container or plate once cooked.
The dressing for the grilled vegetables:
Meanwhile on a small cup add the Oil, Salt, the chopped fresh Chili (or dried chili), the chopped parsley, the vinegar, chopped garlic and carefully mix together. Add the dressing to the vegetables and let them rest for about 1 hour before consuming.
I added some yogurt on the top but you can add whatever you like, the important thing is to enjoy it and I love it with some bread!
