I had some eggplants/aubergines in the fridge 2 days ago and I wanted cook them in a different way. Being a big fan of meatballs I thought why not making eggplants/aubergines meatballs but without meat. That’s when I remembered about eating aubergine meatballs in a family party. Me and my husband loved the results because all you need is just eggplant, cheese, bread crumbs and oil and enjoyed very much cooking this as I prepared the eggplants and he helped me with the cheese and frying them afterwards.
To make these 6 nice eggplants/aubergines meat-less balls you will need:
3 eggplants/aubergines
1 mozzarella
1 egg
100 gr Parmesan cheese
50 gr of soaked bread
100 gr Bread Crumbs
Black Pepper
Fresh Mint (optional)
Fresh Parsley (you can use the dried one if you have that)
Sun Flower Oil for frying
Get ready to cook:
First wet the bread and firmly squeeze it afterwards and put aside.
Chop the eggplants/aubergines into pieces and boil them for about 10 minutes, after that drain the eggplants/aubergines really well and let them cool. After that, put the eggplants/aubergines in a bowl and add the egg,Parmesan cheese, the wet bread ,salt,black pepper,mint and mix very well.
After that, with your hands make the meatballs putting the mozzarella cheese in the middle and then closing the meat-less ball afterwards.
Please note that you can use the amount of cheese that you like, you can even use cheddar instead of mozzarella. This recipe it is all about treating ourselves so put whatever you prefer to. 🙂
Now put the bread crumbs on a plate and after that cover the meat-less ball with the bread crumbs (this will prevent the cheese to come out while frying them). We used a small deep pan to fry and put the oil on it (please make sure the oil is hot before frying this way they will fry evenly and won’t absorb any oil) and when the oil was hot we (well my husband) fried them until golden. That’s it.
There are some days when after a hard day at work, you really want some comfort food a good glass of wine and a nice movie and this eggplants/aubergines really made my day.
