Savoury muffins with leek and spinach
Whenever I have friends coming by, I always make sure to cook something different and interesting. In fact, I usually cook this savory muffin recipe when we are having a party or have a lot of people in the house. These leek and spinach muffins are very easy to make and very comfortable to eat “especially if you are having a BBQ” and don’t have any place to seat down on the table. I really like this recipe because it has very cheap ingredients and doesn’t need too much effort.
To make this savoury muffins you will need:
1 cup of flour
1 whole Leek
150 gr of fresh spinach (but you can use the frozen one)
1 tablespoon of olive oil
2 tablespoons of yogurt
150 gr of cheddar
1 egg
1 teaspoon of baking powder
½ teaspoon of bicarbonate of soda
Salt
½ glass of milk
Put your favourite music on and get ready to cook:
First preheat the oven at gas mark 5/ 190 C/ 375 F. On a frying pan, cook the chopped leek and fresh spinach for about 5-10 on a medium heat, until they become soft.
After that, turn the heat off and let them rest, meanwhile on a bowl put the cooked leek, spinach,yogurt, the egg,the grated cheddar,the oil and mix together, after that add the flour,baking powder, bicarbonate of soda and the salt, mix together again. (If the mixture is too dry add the milk until you have a thick creamy texture.)
On a tray, place the cupcakes cases and carefully pour the mixture in (filling the ¾ of them because the mixture will rise while baking). After that, put them in the oven and bake for about 30-40 minutes, (please note that it really depends upon the oven so make sure to check the muffins after the 25th minutes.) Once they are cooked place them in the kitchen grid to rest. I accompanied the muffins with a simple sauce (yogurt, ricotta, olive oil, fresh parsley and fresh spring onion)

Thanks Alice! I have to make my muffins low-glycmic, so I am up for a bit of a challenge today. I think I am going to use quinoa flour (typical flour is not low-glycemic)…anyway, I have no idea how my savory muffins will turn out…hoping! 😀

I love savoury muffins! For parties, I make them tiny (bite sized). It can be dangerous though because there’s always more for 1 more bite sized muffin but if they were any larger, you probably wouldn’t make the commitment.

I have pinned this to my lunch board and I am sure it would be just as nice for a vegetarian brunch. Have you ever frozen them and enjoyed them at a later stage? It seems like it might work well for these lovely-looking savoury bites 🙂
