Grilled Fish – Mackerel accompanied with vegetables

Grilled Fish - Grilled Mackerel

We went to the supermarket the other day and came across this fresh Mackerel fish “which was quite cheap, 1 pound each” and since I had 1 courgette/zucchini and some potatoes left on the kitchen, my husband came up with this idea of grilling the fish and accompany it with the vegetables. We loved the results because this fish recipe was not only easy to make but quick and cheap. I highly recommend trying it!

To make this quick and yummy Mackerel recipe you will need:

2 Mackerel

1 zucchini

2 potatoes

Salt

Parsley

Chives

Olive oil

Black pepper

2 cloves of Garlic

For the preparation:

First chop the potatoes and the zucchini into cubes (please make sure they are of the same size so they cook evenly).

After that add some oil, the chopped garlic and the potatoes on a frying pan and cook for about 10 minutes until they are slightly cooked, on a medium heat.

Then add the zucchini and cook all together for about 5 minutes mixing very carefully so that the vegetables do not get squashy, after the 5 minutes add salt,black pepper,chives and parsley, lower the heat, put the lead on and continue cooking for another 10 minutes. Once they are cooked turn the heat off and let to rest.

Meanwhile clean and fillet the fish (making sure to take the bones off) and cut in 2-3 pieces the fillet.

Take your grilled pan turn the heat on, marinate the fish with a teaspoon of olive oil and a bit of salt and then carefully place the fish fillets with the skin facing the grilled pan and cook for  3 minutes then carefully turn the fillet from the other side and cook for another 3 minutes (please be sure  the skin side is thoroughly cooked otherwise it will get stuck on the grill).

Once the fish is cooked assemble everything together, the vegetables with the grilled fish ( I also added some Glaze Balsamic Vinegar and watercress salad to the dish.)

You don’t need an expensive type of fish or ingredients to make a nice looking and yummy fish recipe, all you need is the love for food and fantasy.
