Mini sweet little peppers is one of those vegetables that I always have on my fridge because they are not only very healthy but very versatile also. One of my favourite ways of eating them is in salads and adding just few other ingredients. This simple summer salad has just 5 ingredients and what you will need to do is just roast the peppers, then add feta cheese, fresh dill,salt and a good Olive oil. The benefits of this salad are multiple and I highly recommend to try it.
500 gr of mini little peppers
100 gr of Feta cheese
Fresh Dill (you can use the dried one instead)
Good Extra Virgin Olive Oil
First carefully wash the peppers and then place then on a tray and roast them (on grill option) for about 25-30 it really depends upon the oven making sure to turn them from side to side once they are slightly brown. Once they are roasted (you could take the skin away but I prefer to leave it as the skin of the mini peppers is very thin and besides it is very good for you) add the other ingredients, and that’s it. Love the simplicity of this salad and the fact that you have ingredients which are really good for your body:
Pepper- a source of Vitamin C, Vitamin E and six of carotenoids (beta-carotene,alpha-carotene, etc.)
Dill- a very good source of Vitamin C and manganese
Olive oil- one of the healthiest food in the world, full of phenolic antioxidants Vitamin E, Vitamin K, Omega-6.
Feta cheese- a very good source of Calcium.
You could even have the grilled pepper version (just grill them on a non stick pan and add the other ingredients) I prefer the roasted version simply because it is easier. Please do try it I am sure you will like the results, I love preparing it when I come back from work and I feel tired to cook or even if you go for a picnic or having a BBQ.
