This is one of my favourite potato recipe because I love roasted potatoes and the idea of having them stuffed with cheese, pork belly and fresh chives is music to my ears. You will only need small-sized potatoes, pork belly (or bacon) and fresh chives. This recipe is perfect for every season, for a party or a special date and you can sprinkle or add whatever ingredients you prefer (I used dried homemade hot chili and sun-dried tomatoes). I like the fact that every single small potato you fill is different from one another as to offer different and simple taste experience. Imperfect is perfect!!!
For this recipe all you need is:
Serves 2 persons
5 small potatoes
100 gr of pork belly (or bacon)
100 gr of cheddar cheese (but you can use whatever cheese you want)
Fresh Chives
1/3 glass of White wine (optional)
Paprika
Hot chili
For the preparation:
Place the potatoes into the oven (grill option) high temperature 200 C/gas mark 6-7/ 400 F turn them from side to side until brown for about 25-30 minutes. (It really depends upon the oven). Once cooked turn the heat off but don’t take the potatoes out of the oven (as we don’t want them to get completely cold).
Place the pork belly on a pan, add some paprika (or hot chili) and cook it (without adding any oil) until you see the fat melting and become transparent and when it is slightly brown add 1/3 glass of white wine and let it evaporate (this process will enhance the pork belly flavour), once the wine evaporates, turn the heat off.
Carefully take the inside of the small potatoes out with a teaspoon and place it in a bowl and then add the pork belly, the grated cheese,the chopped chives and salt to taste. Add the filling to the small potatoes and decorate as you prefer.
