Pasta salad is one of my favourite type of pasta to eat during the hot weather because it is quick,easy and very healthy. All you have to do is cook the pasta and then add the other ingredients together with it. I think it is the perfect choice especially after a stressful week at work. I remember eating it a lot when I was a student as I used to buy this really sweet cherry tomatoes and delicious mozzarella cheese in a small shop near my house, in fact whenever I have the chance to buy sugary tomatoes I prepare this recipe.
To make this pasta all you need is:
200 gr of pasta (Penne)
100 gr of sweet cherry Tomatoes
100 gr of Mozzarella cheese
50 gr of Cheddar cheese
30 gr of Fresh Basil (you can add more if you prefer)
1 tablespoon of Extra Virgin Olive Oil
First chop all the ingredients into small pieces and then add Salt and 1 tablespoon of olive oil and mix all the ingredients together in a medium-large bowl (as you will mix the pasta and the ingredients together there, later.)
Then, cook the pasta in a boiling water with 1 tbs of Salt and cook it Al Dente, ( it should take 9-10 minutes after putting them in the boiling water.) After cooking the pasta, add it to the bowl with the other ingredients and mix together carefully and that’s it. I love cooking this type of pasta because you can really feel the fresh taste of every single ingredients which beautifully blend together and you don’t need to cook specific sauces or add special ingredients, just open the fridge and work on your imagination. 🙂
