Hello friends, sorry for not posting these past days but we went on holidays which was what we needed after a whole year of hard work. It was a nice way to get away of the everyday routine. In fact, this recipe is one of my favourite this period of time when you don’t want to cook for a long time and want something fresh and healthy to eat. I love organic whole grain pasta’s health benefits and I truly believe that it goes really well with goat cheese and grilled zucchini (the zucchini I used was the one we are growing in our garden) and you will need just a few ingredients to make this recipe. It doesn’t get better than that! 🙂
If you want to try this recipe you will need:
Serves 2 persons
190 gr of Organic Whole grain Fusilli (but you can use any type of pasta you like)
1 whole Zucchini
50-80 gr of goat cheese ( I used the one with chives and parsley but you can use the plain one)
1 fresh hot chili (optional)
2 tablespoons of Extra Virgin Olive Oil
30 gr of Walnuts
Salt
The preparation:
First, cook the pasta (al dente) on the boiling water for about 9 minutes (it depends upon the type of pasta) then drain it and place the pasta on a big bowl with a teaspoon of oil and mix-this way it won’t get sticky. Meanwhile, on a non stick frying pan with no oil turn the heat on maximum and place the sliced zucchini. Cook them for about 2-3 minutes each side until slightly brown, then add to the pasta. Cut the goat cheese into small cubes, roughly smash the walnuts and add to the pasta. Then carefully chop the fresh chili and add it to the pasta. Salt, add the rest of the oil, mix very carefully and that’s it!
Hope you will like this simple but very healthy and fresh pasta salad. I love the texture of the whole grain pasta, the creamy cheese and the crunch that the walnuts add to it. I definitely recommend trying it and please let me know what is your favourite summer dish!
