Broccoli Pesto Sauce Recipe with Tuna and Chili

Hello everyone, hope you are having a good Saturday even though the weather  is not the best today. In days like this, kitchen becomes my favourite place to spent together with my husband (and we always put some of our favourite music on) 🙂 So this specific recipe is something I cooked today with the ingredients I had in the fridge and we really enjoyed it because it was something different, a pleasant surprise and easy to make.

Plus broccoli is very good for you and it works really well  in a “Pesto sauce” version with Parmesan cheese, peanuts, garlic and tuna. You will  just have to boil the broccoli and pasta and add all the other ingredients raw. Delicious 🙂

Ingredients: Broccoli Pesto Sauce Recipe with Tuna and Chili

To make these yummy recipe you will need:

180 gr of Fusilli pasta

10 Small size broccoli flowers

1 can of Tuna (optional)

1 clove of Garlic

2 tablespoons Olive oil

20 gr of Peanuts (but you can use almonds or pine nuts)

40 gr of Parmesan Cheese

Hot chili (optional)

Salt

 

The preparation:

First boil the broccoli flowers in water with some salt until tender, then you can either:

1- Put the broccoli, garlic,peanuts,the cheese, the Olive oil and blend all together on a food processor or

2- Take a bowl and put the boiled broccoli squeeze it with a fork and then take a grater and grate the cheese,garlic and mix all together (I did the second version )

Taste and then add the oil and the salt. After this, boil the pasta (make sure al dente) and then rinse it put it on a bigger bowl and immediately add the broccoli pesto sauce and mix really well. Then add the tuna and a bit of chili (you  can completely omit this stage if you don’t like the tuna but I think it makes an excellent combination with the broccoli.)

This is a type of pasta  I like a lot because I  played with the ingredients and yet it tasted delicious. I love the fact that I didn’t fry anything just boiled the broccoli and the pasta and added the other ingredients (according to my taste). I find this version of broccoli pesto sauce very interesting and think the ingredients work wonderfully together.

I will have to change the other ingredients, because I cannot have cheese or tuna, but I will try to mix it with something else and see what I get 🙂 Thank you for the inspiration!   5. This sounds so good and interesting~ I actually find broccoli one of the hardest veggies for me to cook because I am so picky around the texture- I can’t eat it tough and raw, but if I cook it too much, it gets too mushy- using it this way may be just what I need!
