Hello lovely people, first of all I would like to thank everyone for the love and appreciation you show to my blog, I really do appreciate and am really happy you find in here interesting ideas and recipes.

What I post in here is 100% recipes that me and my husband eat daily and I am very happy to share it with you, just like this one. We had a pretty tough week as there were some problems with the electricity in the house, so we had to fix it (imagine dust  and mess everywhere in the kitchen). So after I cleaned all the mess out, I didn’t have a lot of things in the fridge to cook with, so I thought I would do an amazing, simple and cheap recipe to cook with a little effort.

So basically these gnocchi  are made with one boiled potato, left bread, Italian Kale and tossed with butter and fresh Sage.

For this recipe you will need:

1 big potato

1 egg

100 gr of Cavolo Nero ( which is the Italian kale of Tuscan kale family)

100 Cheddar cheese

2 glasses of milk

100 gr of bread

1 clove of garlic

1 tablespoon of butter

Fresh Sage

Salt

Black Pepper

2 teaspoons of Olive oil

 

For the preparation:

First put the bread into the bowl with the milk until it completely absorbs the milk. Then boil the potato and let it aside to cool. Take the Cavolo Nero (but you can use Kale, it will give you the same flavour) and take only the soft part of it, removing  the stems and put it on a frying pan along with the clove of garlic and the olive oil. Then cook it for some minutes until it has a soft consistency (add some water to help the cooking time), it should be ready in about 20 minutes.

When the bread has soaked all of the milk and it is mushy, drain the excess milk away and squeeze the bread to completely take the milk away  and then put it on a medium bowl, add the boiled skinless potato and mix very well, after that add the cheese,  the cooked kale, salt and pepper. Taste and then add the egg, now mix again until you have a uniform mixture.  Put the mixture on the fridge for about 20-30 minutes. Meanwhile bring to a boil some water on a medium-sized pan and salt.

After that, take the mixture out of the fridge and take a small glass of water near you, which you will need to wet your hands while making the gnocchi, this way they won’t get sticky. Now when the water is boiling take some mixture and with wet hands  make a round meatball like shape and immediately put it on the boiling water.

Don’t worry the gnocchi won’t dissolve in the water.

As you make the gnocchi put them to cook in the water. The gnocchi will cook for approximately 4 minutes (they are ready when they come on the surface of the pan). The last step is to pass the gnocchi from the boiling pan to a frying  pan as soon as they are cooked to toss them with some butter and sage, on a medium low heat for about 5-10 minutes until light brown. That’s it.

I really enjoyed cooking this recipe, not only because it is different from the usual gnocchi and  incredibly cheap but  also delicious and tasteful. My husband was a bit sceptical at the beginning but then he really liked the results. The kale  gnocchi work really well with the butter and Sage (and people won’t even recognize that there is left bread inside).

Simple food and simple life!!!

  6. What a nice recipe! I have made gnocchi with kale before, gnocchi with potatoes of course, and gnocchi with bread, but never all of them together. Burro e salvia is my favorite sauce for many types of gnocchi and ravioli. Great post, thanks for sharing! Interesting that you use cheddar rather than grana or parmigiano.

I prefer using Cheddar rather than Parmigiano simply because I feel Cheddar gives me that creamy effect and it is not that “strong flavoured” as that of the Parmigiano but I definitely prefer the Parmigiano Reggiano to sprinkle on the top. 🙂
