Meatloaf rolled with pinenuts, spinach and cheese

Hello everyone, I hope you are having a wonderful time and are not getting too much stressed about buying presents for Christmas, instead I wanted to share with you one of my favourite recipes that I actually cook for the Christmas dinner. Basically it is a rolled meatloaf filled with pine nuts, spinach and cheddar cheese, it is cooked in the oven and it tastes delicious because the mince meat is flavoured with spices, onion, garlic and the flavour is balanced by the spinach, pine nuts and the cheese.

I accompanied it with a simple peas puree which goes really well with the whole dish. I think this recipe is perfect for a special dinner such as Christmas and want to make a good impression or cook something new and exquisite.

For this recipe you will need:

Serves 2 people

250 gr of mincemeat

1/3 of an onion

2 cloves of garlic

1 egg

20 gr of cheddar cheese

10-15 gr of pine nuts

6-7 leaves of fresh spinach

Oregano

Parsley

Paprika

Salt

1 teaspoon of olive oil

Wild fennel

Bread crumbs

 

The preparation:

First of all, put the mincemeat and the spices in a bowl, then add the onion and the garlic (I grate them in a grater this way you will only feel the flavour and esthetically will look better). Then  mix everything together really well for about 10 minutes (I used my cleaned hands) then add the egg (if  after that the mixture is a bit wet add some bread crumbs if it is not do not add it).

Mix again until you have a uniform texture then put it in the fridge for about 15 minutes.

Take the mixture from the fridge and flatten it with your hands in a rectangular-square shape and then place in the middle the spinach the pine nuts and the cheese cut into sticks making sure to leave the borders empty. Then simply roll it slowly making sure the filling doesn’t come out.

Drizzle with some olive oil on the top and cook in the oven for about 25 minutes at gas mark 5 (190 C), 375 F.

While it is cooking you will see  some delicious liquids coming out from the meatloaf take a table-spoon and pour it in the top so that the meatloaf doesn’t get dry. When it is cooked (or slightly brown) turn the oven off and leave the meatloaf rest for 5 minutes, then serve.

I accompanied the meatloaf with a peas puree which is easy to make, simply boil the peas with salt and a clove of garlic then drain it on a cold ice water so that you don’t lose the vibrant colours then blend all together.

  3. Normally, I dont like the idea of meatloaf….maybe because my Mom used to make her in the microwave when I was a kid (you know….25 years ago) but this looks YUMMY! Pinenuts, spinach and cheese are a win in my book!
