Creamy avocado pesto pasta

Hello everyone I hope this has been a positive week for you, mine has been half way  and I am trying to consider the positive side of things as much as I can but on the other side cooking and blogging are one of those things I have really enjoyed doing. So this is a recipe I loved cooking and eating, as it has one of my favourite ingredients of all, the avocado. I wanted to cook it in a different way so  I added to that some pine nuts, garlic, lime juice, fresh mint and Parmesan cheese surprisingly it made an innovative delicious pesto. In fact, I adored the results, imagine spaghetti tenderly coated by a creamy avocado pesto, all you get is delicious taste in brilliant colours on a plain white plate. You do not need  to add anything else as this is an incredibly healthy, easy and you will only need to cook the spaghetti.

Creamy avocado pesto pasta Ingredients

Serves: 2 people

Cooking time: 25 min

 

To make this delicious and easy recipe all you need is:

180 gr of Spaghetti

3 medium-sized ripened avocado

1 lime (the juice)

1 clove of garlic

Fresh Mint

10 grams of pine nuts

Parmesan cheese

Olive oil

 

The preparation

First of all, peel the avocado and cut them into small pieces, then add the lime juice (this way they won’t get dark coloured) after that, add the chopped garlic, pine nuts, 10 gr (or more) of  grated Parmesan cheese, some mint leaves, salt and 1 teaspoon of olive oil. Next step blend everything together until creamy texture, taste it and if you need add more salt.

After that,  cook and  drain the spaghetti (al dente)and join them to the creamy mixture and that’s it.

I really hope you will like this simple but very delicious recipe which I enjoyed eating and so I thought it was worthy sharing it with you. I think  it is perfect when you are tired from work and don’t really want to get on with serious cooking but also if you want to try something new filled with amazing flavours.

    1. Lol, if you don’t like mint just put one small leaf of the fresh mint and see if it is to your taste but I promise it doesn’t taste minty at all! 🙂

        My wife laughs at how I always make a dish for the first time exactly according to the recipe. Afterwards I can put my own spin on it if there’s something we don’t like or find lacking. I love people who comment on a recipe saying, “I made this last night and it was delicious. The best thing we ever ate. But I didn’t have avocado so I substituted tomato, and no mint so we used parsley, and instead of spaghetti, we used quinoa because we’re trying to cut down on carbs. And it was great!”

    1. You are right simetimes pesto can be a little too oily, I tried to avoid adding too much olive oil and I really liked the results. Hope you will like the taste, also.
