Stuffed Onions Mushroom and cheese

Hello friends, I hope you had a good week and a relaxing weekend (I think weekends go so quick that you don’t even know how is it possible that it is Monday again). Anyway, when I went to do some food  shopping today at the supermarket I bought some really nice white sweet onions and I wanted to cook a recipe when the onion is in “the center of attention” because in most of the recipes  the onion is an ingredient which is used as a supplement to the flavour but not as the main one. I added to the roasted stuffed onions some mushrooms, garlic, Brie cheese, Thyme, Chives and bread crumbs. I loved how the sweet flavour of the onions blend wonderfully well with the nutty taste of the mushrooms and the creamy texture of the cheese. I definitely think this stuffed baked onions recipe is a very good way to appraise the humble onion and have a t the same time a beautiful dish on your table.

Stuffed baked Onions ingredients

Cooking time: 60 min

Serves: 2 People

 

For this very interesting recipe you will need:

2 medium size  white onions

250 gr of chestnut mushrooms

40 gr of soft Brie cheese

1 clove of garlic

Dried (or fresh Thyme)

35 gr of bread crumbs

Olive oil

Chives

 

The preparation:

Preheat the oven on gas mark 5/375 F/190 C

Then, cut both top and bottom edges of the onion (making sure not to cut too much off the bottom as it will be the base). Salt the inside of the onions, drizzle with some olive oil and place them in an upright position on the tray to roast for about 45 minutes or until 90% soft and slightly brown. Mean while on a pan cook the chopped mushrooms with  salt and 1 teaspoon of olive oil until soft for about 15 minutes on low-medium heat.

When the onions and the mushrooms are cooked take the inside layers out of the onions, (leaving just the outside layers), the clove of garlic and blend everything together, then salt, add the bread crumbs the chopped brie cheese, Thyme, Chives and mix very well with a spoon. After that, place the  mixture inside each onion and cook in the onion for about 15 minutes in gas mark 5/375 F/190 C or  when you see the cheese oozing out. That’s it.

      1. I tried the recipe tonight with some alterations. Electriciy is expensive so I cooked the onions in the microwave for 2 min. I scooped out the insides and used them with the mixture. I used brown mushrooms and cheddar/ blue cheese because I didn’t have any Brie. I stuffed the onions and baked them in the oven with a roast of pork. Since I had some stuffing remain I topped the roast with it.
        It was delicious! Thank you, I’ll be making that again!.

  7. Oh my, I am so in love! One of my favorite veggies out of the pot roasts my mama used to make when I was a child was the onion. They were whole and I bet very similar in texture to these wonderful looking onions. I am going to have to give this a try. Thanks for sharing! 🙂
