Hello everyone, Happy Easter to everyone hope you had a good time with your loved ones or friends. Easter for me means eating a lot of chocolate (because you are receiving it from everyone), good food and big family gathering. The celebration begins from the early morning to late night and let me tell you the oven never stops from working that day. 🙂
I am sorry I didn’t post any new recipe the past week but me and my husband went on holiday in Malta and we really enjoyed the time there (the weather especially) and since we are good foodies, we managed to find the best local restaurants where to eat the Maltese traditional food, the best Italian ice-cream and of course a good Neapolitan pizza. When we came back home we didn’t have a lot of food in the kitchen so my husband came up with the idea of making a focaccia bread recipe. You only need few basic ingredients and relax. The results were amazing, as it came soft, thick and the aroma in the kitchen is amazing. Plus, you can cut it in the middle and fill with whatever ingredients you love. This focaccia bread recipe is definitely a must try recipe, you won’t regret trying.
You will need for this recipe:
400 gr of strong white flour
1 teaspoon of dried yeast
1 teaspoon of sugar
3 teaspoon of salt
A pinch of Hymalyan salt coarse
3 small red cherry tomatoes
3 small yellow cherry tomatoes
Extra Virgin Olive oil
The preparation:
First of all, on a small deep bowl add 250 ml of lukewarm water, the yeast and sugar, mix all together and let to rest for about 15 minutes or until it forms a foam.
On a separate big bowl, add the flour, the water with the yeast, 1 teaspoon of olive oil and mix together (you can use your kitchen robot or your hands to knead) when you have a soft homogeneous mixture, add 1 1/2 teaspoon of salt and continue kneading for about 5 minutes or until you have a smooth and soft dough. After that place it in a glass bowl, cover with a cling film and leave to prove for about 1 hour until doubled in size.
After that take the dough out of the bowl and oil the tray when (you are going later to cook it) and place the mixture in it by flattening and make some rough dips and wells with your fingers, then sprinkle some water, oil and a pinch of coarse salt, cover with cling film and leave to prove for another 45 minutes.
Preheat the oven at gas mark 5/200c. Once the dough has risen cut the cherry tomatoes into halves and place them in the dough by gently pushing them in it.
Then add some rosemary, salt and bake for about 25-30 minutes until lightly brown and soft in the middle. Once cooked let to rest 15 minutes before consuming. If you can resist! 🙂
I really hope you will find this amazing recipe interesting, as I love it as it is perfect to cook on Saturdays afternoons without any rush while listening some good music and drinking some good wine. The cherry tomatoes, rosemary and the coarse salt complement perfectly with the focaccia texture and will make the meal perfect. Please let me know your how it goes if you try it!

This looks absolutely delicious. I’d love a little more time in my life to make bread properly but trying to time the resting, kneading and proving with my two little ones is a real challenge. Still I aspire to try something like this if I ever get s couple of free hours at a weekend.
