Hello everyone, I hope you are all doing well and enjoying the nice weather. I notice a lot of blooming flowers everywhere and enjoy the nice walks by the sea in the afternoons as I find it quite relaxing. There is something about the fresh air, the sound of the waves and the seagulls playing with them. In fact the recipe of this week it is deeply related with the sea, as I noticed that me and my husband don’t eat enough fresh fish, so I bought some fresh sprats from my favourite local fish monger and thought of making a healthy Italian fish recipe. I simply added some nice basic ingredients like parsley, bread crumbs, lemon and tomato to then make the most amazing layered fish cake. I loved the results so I thought it was worth it to share this recipe with you. This is definitely very healthy, easy to make but most of all delicious. A must try!
Serves: 4 people
Cooking time: 30 minutes
For this recipe you will need:
350 gr of sprats
100gr of bread crumbs
5 gr of Nuts
20 gr of parsley
1/2 of a lemon
1 tomato
2 gloves of garlic
Salt
Black pepper
Olive oil
The preparation:
Preheat the oven at gas mark 5/190 C.
First of all, you will have to clean the fish by removing the interiors, opening and carefully washing them afterwards. After that, dry the fish with kitchen towel.
Meanwhile, mix the bread crumbs with the parsley, salt and black pepper. Then coat each fish with the bread crumb mixture and place them on a pyrex, continue until you create a layer.
After you have made the first 2 layers add some slices of lemon and tomatoes, add another 2 layers and at the end sprinkle some crushed nuts, olive oil and bake for about 25 minutes. That’s literally it.
I really hope you will like this simple but tasteful recipe which help reevaluate such a humble fish like sprats in a very positive way. I think it is perfect for this period of time and it is a different.

Hello. What is a Sprat? I have never heard of this fish.
