Vegetable Frittata Oven-Baked with Zucchini and Asparagus

Hello everyone, hope you are all doing very well and are having a great weekend despite the weather and everyday life problems. These past weeks have been quite challenging for me but now I am more than ready to cook and make new, delicious recipes to share with you friends. In fact, this particular recipe is one of my most favourite when I don’t have a lot of time to cook or don’t have a lot of ingredients in the fridge. This delicious frittata has asparagus, 1 courgette, 1 mozzarella, some yogurt, onion and obviously some eggs. I added some thyme and black pepper to add more  flavour. I find oven-baked frittatas to be extremely easy to prepare, versatile and it is delicious to accompany with some rustic bread.

Cooking Time: 30min

Serves: 4 Persons

 

To make this delicious recipe you will need:

1 medium size mozzarella

1 medium size courgette

1/2 of red onion

4 eggs

30-50 gr of asparagus

1 tablespoon of yogurt

1/3 glass of milk

Fresh Thyme

Black pepper

Salt

2 teaspoon of olive oil

 

The preparation:

First of all, chop very finely the onion and the courgette, then take a frying-pan add some salt, the courgettes, the onion, the asparagus and gently cook them until soft. (You can add some water to help with the cooking). Then, on a bowl mix the eggs, the yogurt, salt, black pepper, the chopped mozzarella and  the milk.

After that, transfer the mixture and the cooked vegetables on a small Pyrex and then cook in the oven on gas mark 4/180C for about 15-20 or until slightly brown. That’s it! I usually have it with rustic bread or make nice sandwich to take at work.

I really hope you will like this recipe as frittata is one of my favourite  fast recipes as the results are always delicious. I highly recommend trying this version as the vegetables blend really well together with the eggs and the yogurt  helps the frittata become fluffy and soft.
