Hello everyone, it has been a long time since I last posted on my blog and I am very sorry about that but I have been extremely busy with my everyday life and wasn’t in the right mood for blogging. I think there is no point of doing something if you are no 100% into it. Now I am back at posting new interesting recipes I have been cooking and enjoying lately. In fact this is one of them, my favourite left-over recipe of all, veggie burgers. Quite often, I have boiled veggie left in the fridge and to tell you the truth the next day they are not very appealing. So what I do is mix them with other ingredients I have in the kitchen and use the mixture to make the burgers. The results are amazing, considering that they are quick, easy and quite cheap to make. It doesn’t get better than that, right? 🙂
All you need to make 4-5 veggie burgers is:
2 big boiled potatoes
1 egg
100-200 gr of boiled vegetables (peas,long beans,carrots,onions-whatever vegetables you have)
Parmesan cheese 20 gr
Breadcrumbs ( normal or gluten-free)
Black pepper
Fresh dill (or fresh parsley)
Salt
Olive oil or Rapeseed oil
The preparation:
Preheat the oven at 190°-200° C.
After you boil the potatoes mix with the vegetables together then add the egg,dill, spices, the grated Parmesan cheese and the olive oil. Now according to the moisture of the mixture, add the breadcrumbs to dry it a little bit or until you can make veggie burger shapes.
Now place them into a tray with baking paper with a drizzle of olive oil underneath and on the top to avoid the burgers from sticking and cook for about 20-25minutes or until golden brown.
These veggie burgers make a delicious, recycling recipe to make when you come home from work and don’t have have time and energy to seriously get cooking but still want something good to eat. You can accompany them with a yogurt garlic, dill sauce or a salad. I am sure this is a great way to make children eat vegetables as well.
