Potato Gnocchi with Pesto sauce
This is a traditional dish from the northern Italy, it is simple to make (if you have ready prepared gnocchi or the ready Pesto sauce) and pretty complicated but very interesting if you decided to make it yourself. Now, for those who haven’t got a clue of what “Gnocchi” and not Gnocci is, it is simply a mixture of potatoes, flour, eggs and salt. How weird to make a “type of dough” similar to pasta and adding potatoes. The origin of the dish comes from the so-called” poor food” when people used to mix different ingredients they could find in the kitchen during the war, to create in the end something really tasty.
Gnocchi is almost always accompanied by the pesto sauce which is another interesting mixture between Basil, good olive oil, salt,pine nuts, garlic, Parmesan and Pecorino cheese. The colour and the consistency the dish is wonderful because you get the herby flavours blended well with earthy ones of the potatoes and the flour,then if you add the salty taste of the parmesan cheese you would really appreciate the simplicity and the unique features of this dish.
