I have been eating a lot of salads lately and I am enjoying them very much. I like the fact that you can assemble whatever you like and what’s important (whatever you have on your fridge). This salad in particular is one of my favourite as it has simple but very healthy ingredients in it. To make it I used 2 boiled beetroot (full of vitamins and minerals, low in fat and full of antioxidants), green beans (full of vitamin K), fresh spinach (important for skin and hair, provides minerals,protein, iron) and feta cheese ( good for your bones as a good source of calcium).
For the dressing: I used good organic Olive oil, balsamic vinegar, lemon juice and salt mixed them all together in a small cup until they are mixed well and then pour it over the salad (this way the flavour will mix very well together).
I usually like having salads with fish or meat or simply have it with some good bread, it really depends upon how hungry (and in the mood of cooking)I am. Many people find salads to be not very “flattering” but I think they are interesting because everyone can use whatever ingredient he/she likes, personalize and be brave with the flavours.

I am not the biggest salad eater, but sometimes I am craving salad.. especially on warm days. I also have a lot of diet restrictions and cannot eat a lot of things, which makes it hard to eat outside. However, a couple of weeks ago I was visiting a small town in the US and went to a lovely café for lunch. I ordered a salad (after talking to the cook about the ingredients 😉 ) and fell in love!! It was delicious, though simple. Apart from the green stuff, it only had walnuts and cranberries, which added a fruity flavor. With the cranberry vinaigrette it was just perfect. I didn’t have a delicious salad like this ever in my life and will certainly try it at home (I brought a cranberry vinaigrette back home 😉 )
I will also try your salad, cause it sounds healthy and good. I like beetroot and it is a good source of iron.. especially good for women 🙂

yum!!! looks so fresh and inviting Alice! Two nights ago after so many meals of the lasagne…haha, I made a simple mixed baby leaves with a boiled egg, sweet corn, soft white cheese and walnuts then dressed it with a good olive oil & lemon juice! just what my body needed…although my husband kept tucking into the lasagne though lol! ☺️

I love salad, I love beetroot and so this dish is very appealing to me 🙂 Come spring I love being able to go out into the garden to pick herbs and veg to add to salads.

I have been making a lot of spring vegetable quinoa salads – with asparagus, peas, arugula, and the like. Yours looks delicious – I absolutely love beets! I have some seedlings in the ground right now, and I can’t wait until I can harvest them. 🙂

Great looking salad. I’ve been craving salads lately and trying to honor those cravings. I just came back from the supermarket where I got lots of greens, cucumber, lemon, and ginger. I’m sure I’ll figure something out tomorrow.

I have the habit of munching hard stuffs so i will add almond flakes and pumpkin seeds into my salads! Also, i like to shred chicken breast meat into thin slices or mix in tuna chunks 😀 as for the sauce, i like spice it up with black pepper or chili sauce to add flavour. If i feel hungry, i will compensate my carb cravings via couscous or steamed sweet potatoes which are healthier options and have high fiber 😀

This salad looks great! I love the combination of beets with feta other goat cheese, even though I can’t have the cheese anymore! 😦 I love to top my salads with chicken for protein and whatever veggies I have on hand. I love a good balsamic vinaigrette, but I’ve recently become addicted to Annie’s Chile Lime dressing! Nice post, sorry about that previous comment, accidentally hit post on my phone!

“whatever you have on your fridge” – It occurs to me that salad is very much like stir fry without cooking. My wife was on a diet of leaves and such for a good long time. I’d eat the salad and ask, ‘what’s for dinner?’ The kids never complained. And, yes, she was very much into using beets.

My sister made a salad with whatever she loved as well mixed them up. She used Calamansi for hers instead of lemon. That zestiness is the real kicker indeed! 😀

I just commented on Italy take two (take a look, if you like good recipes!) on how I’ve enjoyed salads as lunch lately. For the same reason: so easy to vary them (+ you get full but not over full nor the tiredness afterwards). I don’t have a favourite ingredient, I really like the variation!
